Ummmm….My good friend Paula blessed me with a small jar of this wonderful salad dressing she created a few weeks ago. Hope you enjoy this as much as I have!
2 cloves of garlic (or more…)
1/4 c lightly toasted tahini (Tohum is the best)
1t ume vinegar
1/4c fresh squeezed lemon juice
1/2c extra virgin olive oil (Bariana or Chaffin Family Farm)
Combine the first 4 ingredients then gradually add olive oil mixing until well blended. If you don’t have tahini try almond or pumpkin seed butter. 1t of sea salt can be used in place of the ume vinegar but you’ll be missing out on the probiotic benefits of the ume vinegar. I think perhaps fresh squeezed tangerine or orange juice in place of the lemon juice might be a tasty variation as well…Enjoy!
