It just doesn’t get any simpler than this…
2-3 cloves of fresh garlic, minced (more if you like)
¼ – ½ tsp sea salt
1/4c apple cider vinegar
½ – ¾ c Bariani olive oil
It reduces the clean-up job if you place the ingredients in a glass jar that can be used for pouring your salad dressing later. Just recently my sister’s and I cleaned out my mother’s home of 40+ years… I came across 2 glass Goods Seasons Salad Dressing Cruet Mixing Bottles. I have found these to be excellent for making, storing and pouring our salad dressings. I am sure you can find something nice at the Container Store or a specialty cooking store.
Mince the garlic and place in a glass container… sprinkle with sea salt…if you have the time allow the garlic and salt to sit for a few minutes which extracts the garlic juice from the meat of the garlic. Add the apple cider vinegar and olive oil and allow rest until ready to serve. Refrigerate.
Variations:
To this basic dressing you may add any combination of your favorite fresh herbs, some Dijon mustard, a bit of macadamia nut oil, roasted Tohum tahini or you fill in the blank.
Substitutions:
In place of the apple cider vinegar use the juice of ½ lemon and ½ lime.
In place of the sea salt use about ¼ tsp. of ume vinegar.
